From a single vineyard directly below Les Crayères in Ambonnay, South-facing, with more clay (a perfect site for Coteaux Champenois). Fermented with indigenous yeast and aged in barrel (30% new) for 22 months. Unfined and unfiltered; bottled by hand directly from barrel.
