100% Pinot Noir. “Les Clos Roussots” 1er cru.
Deep terroir, very red soil, clay-limestone with a lot of iron. The surface of 39 ares is planted with mass selection Pinot Noir, this vine is over 60 years old.
Manual harvest in small twenty-kilo boxes, sorting by plot and in the vat room. Vinification in wooden vats, whole grapes, no sulphur, native yeasts, temperature control, gentle vinification, duration of a lunar cycle, no chaptalisation. Little extraction work, pumping over for homogenization at the start, a density of around 1000 and very little punching down. Pressing on a vertical hydraulic press without rebêche. Blend of press wine and free run wine after tasting, in the aging yard.
Aged for 18 months, on the lees, in three-year-old oak barrels, no new barrels, without sulphur. Racking and light sulphating before bottling, no fining, no filtration, bottling at the Domaine by gravity.
Winemaking Team Notes: "Nose of black fruits (blackberries, blackcurrant, sloe), full mouth, frank, deep color, finish with melted tannins. Eighteen months of aging in oak barrels gave it its character as a wine for laying down. Two years in the cellar will allow it to acquire its maturity."
